Thank goodness for easy slow cooker meals, especially on week nights! I’m all about those set it and forget it recipes, and potato soup made in the slow cooker or Instant Pot is one of my favorites! This easy recipe calls for only 5 ingredients and can be made in either a slow cooker or Instant Pot, whichever method you prefer! It comes out so creamy and delicious too! SLOW COOKER POTATO SOUP
Ingredients for Potato Soup
30 oz frozen diced hash browns
4 cups chicken broth
10 oz cream of chicken soup
8 oz cream cheese
1/2 cup bacon pieces
1 cup shredded cheddar cheese (for topping)
How to Make Potato Soup in the Slow Cooker
1. Add hash browns to the slow cooker.
2. Pour in the chicken broth and stir.
3. Add cream of chicken and cream cheese.
4. Add in bacon pieces.
5. Mix all ingredients together.
6. Cover with lid and set on low for 8 hours.
How to Make Potato Soup in the Instant Pot
1. Mix the hash browns, chicken broth, and cream of chicken into the Instant Pot.
2. Put the lid on and close the pressure valve.
3. Set the Instant Pot on the Soup setting for 15 minutes.
4. When done, do a quick release for the steam.
5. When the steam pin drops, remove the lid and add the cream cheese (in diced cubes), then stir.
6. Put the lid back on and leave on Keep Warm until ready to serve.
7. Top with bacon and shredded cheese if desired.
