I tend to be a creature of habit with many things, but when it comes to food, I’d be lying if I said I didn’t get bored with the same meals quickly. Since we’ve been wanting to cut back on going out to eat and have been cooking more at home, I’ve been trying to change things up in the kitchen to keep our meals interesting. I’ve found the easiest way to do this is to take my husband’s and my favorite foods and put a fun spin on them!
Fajitas and really anything Mexican in general is always a hit at my house, so I decided to change things up a bit a try a fajita bowl! I love burrito bowls, so I figured why not!? These pork fajita bowls I made ended up being a quick meal that can be whipped up in under 30 minutes! I call that a win! Grab the recipe below!
PORK FAJITA BOWLS
Ingredients
– Green pepper, julienned
– Red pepper, julienned
– 1 medium onion, thinly sliced
– 1 can black beans, drained
– Smithfield Applewood Smoked Bacon Pork Loin Filet (or flavor of choice)
– Dried oregano, cumin, chili powder, garlic powder (just a dash to season peppers)
– Jasmine rice
– Olive oil
– Optional: shredded cheese, salsa, guacamole, sour cream
Instructions
Step 1: Cut the peppers and onions into thin slices.
Step 2: In a skillet, sauté the peppers and onions with seasonings and olive oil.
Step 3: Place the Smithfield Applewood Smoked Bacon Pork Loin Filet in a baking dish and bake per instructions on the label. Baking time will vary by size. Once done, slice into thin strips.
Step 4: Layer the bottom of a bowl with jasmine rice, then top with peppers, onions, pork loin, black beans and additional desired toppings.
I decided to change this pork fajita bowls recipe up by using pork instead of traditional grilled chicken or steak! When I saw the Smithfield Marinated Fresh Pork on rollback at Walmart (it’s on rollback until April 24!) I figured it would make for a delicious hassle-free meal in no time since it’s already perfectly marinated and seasoned.
This saved a ton of time in the kitchen, since marinating can take hours if you want to do it right!
The Smithfield Marinated Fresh Pork used in this recipe is made with real all-natural ingredients like pork broth, vinegar, salt and spices and is just as fresh tasting as doing it yourself! It’s versatile enough for easy weeknight cooking which is what I’m always on the hunt for, but it’s also great for weekend grilling. I just love how versatile it is!

This looks really simple! Crock pot chicken legs or Chinese themed stir fries go over great at our house! (It clears out leftover sauces and leftovers too.)
