I’m always looking for fun ways to incorporate more protein into my diet and if I’m going to have a sweet treat, I might as well get something out of it! Protein muffins are my carb of choice, especially for a morning snack before a big workout!
I love the endless flavor possibilities when it comes to muffins, but my all time favorite is banana! I’ve tried making protein muffins many ways, but my go-to is the old fashioned way using healthy ingredients from scratch like my grandma would!
These old fashioned banana oat protein muffins are the real deal! If you’re looking for a sweet way to add more protein into your day, you’re going to want to give this recipe a try!
OLD FASHIONED BANANA OAT PROTEIN MUFFINS
INGREDIENTS
– 1 cup rolled oats, ground
– 1/2 cup flour
– 1 1/4 cup protein powder
– 1/2 cup sugar (or natural sugar substitute for baking – just accordingly)
– 4 bananas, mashed
– 2 tbs baking powder
– 3 tbs vanilla extract
– 2 tbs Armour Premium All-Natural Lard
– 1 cup milk
INSTRUCTIONS
Step 1: Preheat oven to 350 degrees.
Step 2: In a mixing bowl, combine flour, protein powder, rolled oats, sugar, baking powder, and vanilla.
Step 3: In a separate dish, mash the bananas, then add to the other bowl of dry ingredients and stir well.
Step 4: Add in the milk and lard and continue to mix until evenly combined.
Step 5: Fill muffin mix about 2/3 full into a muffin pan.
Step 6: Bake for approximately 15 minutes or until slightly golden brown.
There are no shortcuts with this recipe! This is the real deal made with real ingredients!
One of my favorite things about cooking and baking is being able to control my ingredients, knowing what’s in my food, and being able to make healthier substitutions when necessary! For example, I personally like to make these old fashioned banana oat protein muffins with a natural sugar baking alternative vs sugar, but to each their own!
I also prefer to use a healthy fat! In this case, it’s Armour Premium All-Natural Lard (found in the baking aisle at my local Walmart!) Does the word lard sound pretty? No! But guess what!? Lard is actually one of the healthiest cooking fats you can buy.
Lard is a heart-healthy monounsaturated fat known for lowering LDL cholesterol. It has less saturated fat than butter and no trans fat like shortening. It’s my go-to ingredient for this old fashioned recipe since it makes food crispy, flaky, and light!
