One of my all time favorite guilty pleasures is Mexican food. I’ve never met a burrito or nacho bowl I didn’t like! I know I can’t be the only one, right!?
Chris and I honeymooned in Mexico, and one of my favorite snacks from our trip was Mexican street corn nachos – they were the kind you can’t eat just one of! Ever since then, I’ve been craving them, so I figured there had to be a way I could recreate this delicious dish somehow.
I put on my unofficial chef hat and came pretty darn close if you ask me! If you’re trying to cut calories, you may want to skip this post, butttt if you’re looking for your new favorite snack, keep on reading!
If you like nachos, then today you’re in for a real treat because these grilled Mexican street corn nachos take ’em to a whole ‘nother level!
MEXICAN STREET CORN NACHOS
Ingredients
– 4 whole ears of corn, shucked & grilled
– Ricos Nacho Cheese and Queso Blanco (the more the merrier!)
– Fresh cilantro
– Lime wedges (for drizzle and garnish)
– 2 tbs Olive oil
– 1 tsp Chili powder
– 1/2 cup mayonnaise
– 1/2 cup sour cream
– 1 1/2 cup Cotija cheese, crumbled
– 1 bag tortilla chips
– Salt & pepper
Instructions
Step 1: Remove corn from the husk and lightly coat with olive oil, salt, and pepper.
Step 2: Grill the corn over medium heat until browned.
Step 3: Remove the corn from the grill and keep warm.
Step 4: In a mixing bowl, combine cotija cheese, sour cream, mayo, chili powder, and cilantro.
Step 5: Coat the grilled corn with the above mixture.
Step 6: Remove corn from the cob.
Step 7: Spread tortilla chips on a plate or baking sheet and drizzle with Ricos Gourmet Nacho Cheese and Queso Blanco.
Step 8: Top the nachos with the grilled corn, then top with additional cilantro and crumbled cotija.
Step 9: Garnish with lime and lime zest if desired.
Step 10: Place in oven at 350 degrees for 5 minutes to warm. *You should prepare the Mexican street corn nachos on a baking sheet if you decide to do this step.
If you have a specific preference for cheese, you can totally customize these Mexican street corn nachos to your liking. I love all cheese, so the more the merrier on my part!
A combination of both Ricos Gourmet Nacho Cheese and Queso Blanco hit the spot for me with this recipe!
Hot & Spicy Cheddar, Premium Cheddar, and Gourmet Cheddar Ricos cheese sauces would work too! All of them are trans fat free and are made without hydrogenated oils, so that’s a plus.
You can find these at Walmart and they come in a variety of 15oz and 6lb 10 oz cans giving you plenty of options for recipe making and entertaining. The cheese is great on its own too – just heat and eat!
