There was something about the idea of having to flip the egg that gave me all the fear of my meal being a total disaster. I chalk that fear up to my previous experience with trying to make pancakes (helloooo runny mess everywhere), but that’s a different story for a different day! Finally, I got over that fear and decided to give it one more go. Now I’m a self-proclaimed egg and pancake pro – #lookatmenow! If you’ve ever felt the same way about these foods that require flipping, I say just go for it! The end result is worth the messy struggle, but that’s beside the point.
Now onto what really matters… is there anything better than starting the day with crawfish!? My vote is no! If you’re on the hunt for the perfect brunch item, this cajun crawfish omelet is exactly what you need!
INGREDIENTS: serves 1
– 2 large eggs
– One dozen peeled & cooked crawfish tails
– 1 tbs butter
– 1 drop of hot sauce
– 1/4 cup Borden® Cheese Finely Shredded Mild Cheddar Shreds
– 1/4 cup Borden® Cheese Pepper Jack Chunk, shredded
– 1/4 tsp cajun seasoning
– Splash of water
– Salt & pepper to taste
– Dash of parsley
INSTRUCTIONS:
1. In a mixing bowl, combine eggs and a splash of water, then scramble.
2. Add 1 drop of hot sauce, salt, and pepper to taste.
3. In a small skillet, heat butter until melted over medium heat.
4. Add egg and cook until bottom layer is done, approx. 4 minutes.
5. Add crawfish, cajun seasoning, and cheese to one side.
6. When egg is fully cooked & cheese melts, fold the omelet over and serve topped with parsley.
The key to a good omelet is the ooey gooey cheese and perfectly seasoned crawfish tails! For this recipe, I used Borden® Cheese Finely Shredded Mild Cheddar Shreds and Borden® Cheese Pepper Jack Chunk (I found them at Walmart, but check the store locator here to see where to purchase it near you), which makes for the best cheesy combo! The pepper jack adds just the right amount of kick to this cajun crawfish omelet! I believe love should always be an ingredient, and this cheesy combo is right on point!
Depending on where you’re located regionally, you should be able to find packaged peeled crawfish tails in the frozen seafood section of your grocery. Those will work just fine, but for the best results, I recommend peeling your own from a crawfish boil! The seasoning from the boil will have plenty of time to soak into the crawfish and will give it the perfect balance of authentic Louisiana flavor. If you’re unable to attend a crawfish boil and peel your own, you can pan fry the crawfish tails on the stove with some butter and a sprinkle of crab boil seasoning for a similar taste.
