One of my favorite guilty pleasures is peanut butter honey oat cookies. That’s probably the last thing my trainer wants to hear me say right now, but it’s true! As some of you may know from reading this, my days of enjoying these peanut butter honey oat cookies may be over for the next 8 weeks, but that won’t stop me from sharing the goodness with y’all! I mean, if I can’t enjoy them, then someone should, right!? Have one in my honor please!
What You Need:
– 1 cup creamy peanut butter
– 1 cup Honey Bunches of Oats cereal (get $1 off here)
– 1 egg
– 1.5 cups of brown sugar
– 1 stick of butter
– 1/2 tsp vanilla extract
– 1 tsp baking soda
– 2/3 cup flower
What You Do:
1. Preheat oven to 375 degrees.
2. In a large mixing bowl, combine Honey Bunches of Oats cereal (don’t forget your coupon!), egg, brown sugar, butter, vanilla, and peanut butter and mix until smooth.
3. In a separate mixing bowl, mix flour and baking soda until smooth, then combine with the egg, sugar, butter, vanilla, and peanut butter mixture.
4. Scoop dough into 1 inch balls and place on non-stick baking sheet approximately 2 inches apart.
5. Bake at 375 degrees for 8-10 minutes until slightly golden.
I think this is my favorite version of a peanut butter cookie yet and it’s all because of the added crunch! I love making desserts wth cereal recipes and this peanut butter honey oat cookies recipe never disappoints! The Honey Bunches of Oats cereal adds just the right amount of crunch to these soft and chewy cookies!

I made these tonight and they turned out great! I added some salt and peanut butter chips, and I ended up flattening them a little after I baked the first batch because they didn’t spread at all. They are AMAZING! Thanks for the recipe!!

I made these today and made two modifications. 375 in my oven was too hot — because it was a new recipe I started with 2 test cookies. Turned oven to 350 for the balance of the recipe. I added another 1/2 cup of cereal after the test cookies because I thought the batter needed it. I have a nice looking cookie but they are not the light blonde pictured — need to see if they pass the hubby test. My house sure smells good. This recipe is definitely a peanut butter cookie w HBOO for a bit of crunch.
