Considering this is already my second post that is Christmas entertaining themed, I think it’s obvious how excited I am for the holidays! I love this time of the year when I get to see everybody, enjoy good food, and there is overall cheer all around. It really can’t be beat! We always have family over for the holidays and one of the parts I love most about it all is getting to prepare food for our guests. I tend to go a little overboard when it comes down to dessert, but you can’t argue that it’s not the best part! While I make a variety of dessert options, I always incorporate some sort of grab and go dessert as well. These honey popcorn ball pops are always a hit. They make for great finger foods and luckily, they’re easy to make!
WHAT YOU NEED
1 bag (6 cups) Kettle Corn Popcorn (I used Boom Chicka Pop Lightly Sweet)
4 tbs Honey (I used Don Victor Pure Honey with Comb)
Cookie Scoop
Pop Sticks
Wax Paper
WHAT YOU DO
Heat the honey on the stove over low heat just until it comes to a soft boil. Place popcorn in a mixing bowl, then drizzle heated honey over popcorn. Let cool, then toss around until popcorn is evenly coated in the honey.
Using a small cookie dough scooper, scoop popcorn to make each ball. Press the popcorn firmly into the scooper to crush and form into a tight ball, then place onto wax paper. Insert pop sticks onto the top of the popcorn ball, then serve.
I like to use Don Victor honey (I found it at Walmart in the hispanic aisle) when I make these honey popcorn balls since it’s raw filtered honey and comes with the honeycomb. They honey comb makes a great addition to the popcorn balls. To add the honeycomb, just crunch it up and mix into the warm honey before drizzling over popcorn. Side note- you will want to store the honey at room temperature for best results.
