If you’re planning on entertaining a group of friends for happy hour and Cinco de Mayo festivities, there are some easy ways to add a little bit of true Mexican flair to your setup. My go to Cinco de Mayo party items include a DIY burrito bar along with appetizers.
This year’s menu will include beef taquitos, beef tamales, and a burrito bar to make cheesy bean and rice burritos. I discovered my love for this combo when Chris and I had a Mexican dinner at home last week and I can’t wait to recreate it again. The taquitos made the perfect crunchy addition and are also fun for dipping in a side of salsa, queso, or beans.
Wanna know a secret? Those tamales were ready in just three minutes. I wouldn’t even know where to start to make these homemade, so off to the frozen aisle I went! I was surprised at how much they tasted like the tamales at my recently discovered favorite Tex-Mex restaurant here in Dallas! If you’re on the hunt for a way to make your Cinco de Mayo party scream fiesta, Delimex taquitos and tamales are the way to go.
For the burrito bar, think Chipotle at home. All you need to do is fill a few bowls with your favorite burrito fillings. WHAT YOU NEED :: To recreate the goodness you see above, you will need one can of refried beans, Mexican rice, shredded cheese, and soft burrito sized tortillas.
WHAT YOU DO :: How you choose to layer your burrito is up to you. For mine, I started with a layer of refried beans. I find its easier to layer the beans first, that way the rice can sort of stick to the beans and it won’t create much of a mess. Once the beans are layered, place your rice over the beans, and then top with cheese. Try not to go too crazy like I do or else your burrito will be too big to roll! Serve your burrito with a side of taquitos or tamales, and save some rice and beans for extra sides and you’ve got yourself a legit Cinco de Mayo burrito bar setup!
