I’m all about enjoying a lunch that’s quick, easy to make, has a little kick, but won’t fill you up too much. One of my go to lunches to make for Chris and I is a meatball pepperoni sub. It’s the perfect size for splitting for two and leaves you satisfied. It’s too good not to share, so here’s how it’s done.
To make the meatball pepperoni sub, you will need: large sub roll, white american cheese, turkey meatballs, marinara sauce, and Hormel Original Pepperoni. For the turkey meatballs, I opted for frozen meatballs that can quickly be heated up, since I like to make this sub as a quick meal, but you can make them homemade if you please!
First, you will want to cut your slices of American cheese in half to fit the sub bread. Place both pieces of cheese on the bottom layer of the bread. I used one slice of cheese, but you can place more if desired. Meanwhile, defrost your meatballs because they will go on next and preheat your oven to 350.
Place your defrosted meatballs in a bowl of marinara to get them coated in the sauce, then place them on top the layer of cheese on your sub.
Top your meatballs off with the pepperoni. I used the Hormel pepperoni since they are large in size and coat the meatballs and bread well. For an extra kick, layer some more pepperoni along the top side of the sub. Place the sub on a baking sheet in your oven and bake at 350 for about 5 minutes or until the cheese is slightly melted. Now for the best part… dig in!
I like to eat my sub with a few pieces of pepperoni and meatballs on the side because I just really love the taste. Enjoy!
