Last night, I had a craving for a taste of home. I was wanting my favorite dish ever, seafood pasta, so I did what any girl with southern withdrawals would do and decided to fix the ongoing food crave issue. A trip to the grocery and liquor store (yep you heard that right, this baby’s got wine in it) and I was all set. Next thing you know, I was whipping up all kinds of stuff in pots and pans like I knew what I was doing or something. I don’t mean to brag or anything, but…. this stuff’s legit.
Don’t let the name fool ya. It may sound all fancy schmancy, but I promise it’s simple and even your hubby, man friend, boy toy, or whoever he may be can do it, unless you’re lucky and have one that can already cook. Regardless, you’ll both be glad you tried it.
Okay, so now that I’ve convinced you that this is pretty much the best thing ever, let’s get to the reason why you’re reading this in the first place.
1 pack linguine pasta
1/2 lb fresh shrimp
1/2 lb fresh bay scallops
1 cup white wine *
1/2 cup heavy cream
1/3 cup freshly chopped parsley
1/4 cup freshly chopped shallot
2 cloves minced garlic
4 tbsp butter
2 tbsp lemon juice
1 tbsp flour
1 tbsp parmesan cheese
1 tsp salt
1 tsp pepper
1 tsp sugar (optional)
1 tsp slap ya mama cajun seasoning
1 pinch of chopped basil
*make an extra cup to sip on while you cook 😉 I used Sauvignon Blanc.
For the linguine, begin boiling the water and cook pasta according to directions on package.
For the roux, melt 3 tbsp of butter into a pot, then add flour, heavy cream, sugar, salt, and pepper.
Heat and whisk until smooth.
In a separate skillet, melt 1 tbsp of butter.
Sauté the (defrosted) shrimp and scallops with the parsley, shallots, and garlic for about 4 min.
Add the roux, white wine, and basil to the pot with the seafood mixture.
Stir and cook for about 4 min. over medium heat until sauce thickens.
Squeeze fresh lemon juice into seafood mixture.
Top with some Slap Ya Mama, parmesan cheese, and stir well.
Serve over a warm bed of pasta and try not to think of all the calories you’re about to consume!
